A few additional modifications you can do to your tables in Word 2007, once you have the basics that is, is you can sort the cells ascending and descending, merge cells together to hold more text and even position your text both horizontally and vertically. The easiest to write about is positioning your text in a cell: right click the cell and hover over Text Direction and click one of the tiny buttons that bests matches your desired positioning of your text or the contents of your cell. If you want to do all the cells in your table you'll first select your table and instead of right clicking (another way), click on the Layout Tab, in Alignment group and click Text Direction button.
